I ...Now this is a salad that seems familiar to me! I eat a variation on this theme almost every day. Citrus and I do not get along, and I can only do beets if they're pickled and in Finland, but sunflower seeds and avocado...yes. I do use a different vinegar (raspberry blush, or something along those lines, is what I'm using all the time these days).
