School-Time Bella is different from Vacation Bella. School-Time Bella doesn't have time to cook, not with work and classes. But Vacation Bella makes us things like this salad for our Saturday lunch: grilled chicken, roasted butternut squash, feta cheese, dried cranberries, and crispy fried parsnip strips.
It all sounds good, but I'm most intrigued by the parsnips. Did she fry them herself? I'd love to try that.
ReplyDeleteI am not a fan of Feta cheese, but the rest sounds really good.
ReplyDeleteI need a vacation Bella!😊 Enjoy!!
ReplyDeleteAfter the decadence of the holidays, I'm SO ready for wholesome, healthy, tasty food. THIS sounds wonderful!!!!! : )
ReplyDeleteMercy that sounds a mazing!
ReplyDeleteI always love to hear what Bella is cooking up! This sounds delicious!
ReplyDeleteBella made strips of parsnip with a carrot peeler and dropped them into a shallow skillet of hot oil. They just needed a few seconds of frying before they were crispy and light brown. Drain them on a paper towel, and sprinkle with salt. So good!
