In the Vintage Kitchen: Salmon Patties

  2. My, that is vintage cooking! I grew up with salmon patties, too. I think I remember liking them... but I'm not a fish eater today. I don't know if the patties have anything to do with that or not! LOL! Thanks for the memories.

  3. Salmon patties were a common meal in our house. When the budget was tight my mom would substitue mackerel.

    I've carried on the traditon of making salmon patties. My husband and kids love them.

  5. They were one of my mom's "pantry" meals and I loved them.

    I remember my Catholic friends having them for Friday night dinners back when that was their day not to eat meat. :)

    Your recipe is interesting because it has potatoes in them. I must try that.

  6. I feel like an antique! I still SERVE salmon patties--but updated with whole wheat bread crumbs and dijon mustard in the mix. My kids love 'em!

  7. Thank you for the happy memory! My mother used to make these with some regularity, but she called them "salmon croquettes," which tended to elevate them to a higher level of elegance in the eyes of her two daughters.

  9. hm, I seem to be the only one with bad memories of these... but perhaps it's because my mother left the bones in AND made us eat them.(Extra calcium, you know) :) There's just something a little odd about the crunch.

  10. We have salmon patties on the weeks fillet is not on sale. We LOVE the bones, though I mash them during preparation. My mom's vintage recipe reads 'pick out the black' which always makes me smile, being her more charming and Southern way of saying 'take out the skin'.

  11. I'm glad I'm not the only one who still makes these! Deb, we called them croquettes, too, and sometimes made them out of leftover minced chicken.

    I tried substituting mackeral once, as a new bride, but was quickly told never to do that again (!)

  14. I have a unique recipe I created that is scrumptious with canned salmon. But I really don't need any elegant names for them, because I think "salmon cakes" are just plain good! Does your family like cilantro? You could leave it out if necessary, but I believe it makes for delectation to the upteeneth degree.
    I truly just throw it all together when I'm preparing these so the measurements are not exact:(howbeit close)
    1 can of salmon
    1/2 c mayonaise
    2 T minced onion
    1 egg
    1 T flour, or a little more
    if necessary
    1/2 c yellow corn, canned or
    frozen
    1-2 T fresh cilantro
    I mix them with my hands( is there any other way?) shape into patties and fry them in a skillet with a little olive oil. ENJOY!

    Just a bit of warning. Any visitors for the remainder of the evening will know what you had for supper; there is no hiding the fact!

  16. I have been a reader of your blog for a long time but have never posted. Your salmon patties post pushed me over into doing so.
    I grew up with salmon patties too so I have been making them for my family for a while now.
    However, we use a box of Jiffy corn bread mix (instead of bread crumbs or potato, and some chopped onion and celery in the patty. I think everything else is the same. Perfect portion size can be done with a large Pamperd Chef scoop (muffin size) and then flattening with a spatula once the bottom starts to cook up.
    Anyway...just had to comment!
    Love your blog by the way! I live in Central California and am amazed that two people I know read your blog too and I did not tell them about it!

  18. My 78 year old neighbor makes salmon cakes atleast once a week... we always enjoy her leftovers! She sends the ones that her and her husband can't eat for lunch over to my house, still warm! Yummy! She uses can salmon and showed me how to do them once, but as long as she makes them once a week, there is no need for me to try! She also has a 100 year old tea cookie recipe that we are going to do together soon.

  20. I had to laugh when I saw this post - not b/c of what you wrote, but b/c as a newly wed years ago - I endeavored to make salmon patties from scratch (WITHOUT A RECIPE). It was the only thing my beloved ever sputtered and gagged on and refused to eat! Perhaps if I made your recipe I would REDEEM myself! Then again, I would probably be lucky to get him to even put it in his mouth! LOL!

  22. Pulled up this post from searching Google for Salmon patties. Glad to know folks besides myself still enjoy them. One of your posters was right, people will surely know what you had for dinner....but that's ok! Here's a question...what should I serve with them? Usually it's just mac-n-cheese, but does get boring sometimes....
