I finally tackled my baskets of pears. I'm drying several sheets right now (you can hear the dehydrator, right? I sure can).
I also made two batches of pear preserves. To do this, I cut up a bunch of pears, added some sugar, a lot of chopped candied ginger, and the zest and juice of a lime. This smelled unbelievably good while it was cooking.
Those pear preserves sound lovely with the crystallised ginger, thanks for the tip.

ReplyDeleteelizabeth, I didn't use a recipe. I used about ten cups of finely chopped pear, about two cups of sugar, zest and juice of a lime, and half a cup of chopped candied ginger. That stays on the heat until it starts to sheet when dripped from a spoon, then goes into hot jars and undergoes a ten minute hot-water bath. Consult jam-making instructions for safety!!
