PS Anna this is off topic: I have a minor but increasing wheat intolerance so I'm cooking more with alternate flours, your blog has been a great help for ideas and books. Do you bake bread with alternate flour or have you and the Composer eliminated bread?
Rose, we don't eat any at all. There's a pretty persuasive case to be made against gluten-free flours in terms of blood sugar elevation and inflammation--the non-wheat flours are not too good for you. Except for ground nuts--almond and hazelnut "flour" are just fine.
