Early Spring Fruit Salad
Too early for the beautiful fruits of summer, and the fall and winter citrus fruits are winding down, so I've been making bowlfuls of this. These are sturdy fruits that keep nicely in the fridge, so we can have it even late in the week--no rushing to fix it the day after marketing.
1 can unsweetened pineapple chunks, drained
2 small granny smith apples, chopped
1 grapefruit, peel cut away and flesh cut out of sections
2 oranges, peeled and chopped
a handful of red or green grapes if I have them
Toss with the juice of a lime, and 2 T. brown sugar or honey--a dressing that makes *any* fruit taste sublime.
And of course, you can add anything else you want to this big bowlful--kiwis, strawberries, pears. It will keep you going til farmer's market re-opens!

Your fruit salad looks very refreshing. Which reminds me, I have some glorious red seedless grapes in the fridge for me to eat.

Also works well with a bit of yoghurt instead of the dressing. A good start to the day!

Mmmm, yummy! We love making fruit salads in our house as well and often use the lime juice and sugar idea. It's always so refreshing and yummy!

We are in the bounty of late summer/early autumn but I know that end of winter fruit time well and handle it much the same way. In winter I like to slice citrus thinly and pour over a brown sugar syrup. Caramelised oranges, yum.
hmmm. I'll consider making fruit salads just for us. We eat lots of fruit, but usually just so (or roasted!). I adore fruit salad and learned the lime juice trick from my aunt, but I consider fruit salad "special."

I made this for Easter morning - so good. This is going to become a habit. Why did I never think of it?
