Last Call for Peaches

Now or never on freezing peaches for winter cobblers. I picked up my box this morning. It's a good life when your peach grower knows your name!

Yes, I was thinking the same thing. How do you freeze peaches? Do you freeze them as they are or do you blanch them first?

I was just looking this up! Everything I found said to use a sugar syrup, but was wondering if that's needed. I'd love to find out how you do it. I want peaches in January, too.

Yes, Anna - tell us how you do it. (I still haven't had a local peach!)

I just picked up some white peaches from our local farm stand. They're so sweet, it's like eating sugar! They are especially delicious this year!

I've canned a lot of peaches, but never frozen them... I would love to know what you do as well.

Anna you are a constant reminder to slow down and live the good life. I love peaches and have not made a peach cobbler or a pie, or tart. Better get to it.

I freeze my peaches the easy way. Slice them up (peel on) and load into quart-size freezer bags. Yes, they will be brown when they're thawed. That's why I only partially thaw them before baking them into a pie or cobbler. Or I leave them mostly frozen and put in the blender with sugar (and sometimes cream if G's not home) for a very quick, very refreshing sorbet.

A thawed peach will never be a pretty peach. We cannot ask it to be more than it is. But it's good enough in the wintertime, in the ways I've described.

Great, thanks for that information Anna.
