Remember Your Rhubarb
For some reason I always forget that I have purchased rhubarb and I let it go bad in the fridge.
I did remember in time this week, though, and I made a strawberry-rhubarb crisp and put it in the oven. Then I headed to gymnastics.
At the twin bridges I realized that I had forgotten to take it out of the oven. Fortunately Clara was home by the phone, and all was not lost.
If you want to try your own, here is a similar recipe. You can substitute two cups of strawberries (from the freezer. Let's use up the last of the 2009 berries now!) for half the rhubarb.
But set your timer.

I always forget I have a plant of it growing near the back fence. That bush sprouts and dies off before I remember, almost every year.

Thank you for this recipe...I am forever looking for new ideas for rhubarb. My "men" love apple crisp, so I'm sure that they will enjoy this as well.

To prevent that rhubarb from going bad, or when you are blessed with an influx of it from both sets of grandparents and aunts and uncles (speaking from experience here...), my grandma taught me to chop it up (just as you have in the crisp), put 1c portions in baggies and freeze. now I have my brown sugar-rhubarb muffins all year round! {And I don't even have to defrost it--I just toss the frozen rhubarb in my muffin batter and bake. it's perfect.}
I LOVE fruit crisps of any kind.

I just found your blog and I love it! :) Very encouraging and inspiring!
I wanted to share with you that we freeze our rhubarb. It's a trick I recently learned...thankfully! Ours used to go bad before I could use it up, too! Now we just wash, dry, and cut it to the size we need for our crisp recipe. Then we measure 1 or 2 cups out and freeze it in a baggie marked with the amount inside.
