Pizza with Eggplant


I love that Bella decided to make these eggplant pizzas even though she doesn't like eggplant. She just thought she'd give it a try (they were totally delicious).

A happy moment this late morning when I sat on the couch crocheting (obsessively) and listened--Bella was running her eggplant experiment in the kitchen, Felix was at the computer trying to identify an unusual warbler by call, Clara was playing her cello upstairs, and Daisy sat in the sunshine on the floor humming and playing paperdolls.

I love those sweet moments of contentment.....and having everyone under one roof (although you may have been missing two).
I am trying to slow down and do more calming hand-work...before the end of the day hits and my 47 year old eyes are too tired out from my full day. :)

Sounds like a delightful morning Anna. We had asparagus pizza a few nights ago and it was delicious too.

I had similar pleasant thoughts yesterday. As I tidied up from a special breakfast, my husband and I conversed lightly over the din of cheerful children playing. Later, my youngest was napping,my oldest was out with daddy and while I plunked quiet hymns on the piano, I listened to my daughter playing with her dolls and dollhouse on the floor next to me.

I think eggplant is tricky to make delicious. Good for Bella! Was it just a pizza topping, or was the eggplant in place of the crust?

I like to grill eggplant and use it in ratatouille.

Bella salted the eggplant for half an hour, then patted it off, brushed it with olive oil and broiled it, then layered it on regular pizza crust and followed with regular sauce and cheese toppings. Good!

Anna, maybe you have posted this before. I just tried to see if you had to no avail. Basically I am wondering what Bella's pizza dough recipie is? I have been on a home made pizza kick and have made several different versions. If you could post it that would be great!

We have taken to using the dough from the Artisan Bread in Five Minutes a Day for everything, including pizza dough. It's great because we always keep a bucket of it going in the fridge, that way pizza can be a spur-of-the-moment project. We take out a chunk, roll it out, and don't even let it rise before covering it with sauce and cheese and baking.

I just came home from a trip to my local Goodwill store. Not only did I find myself some great cross country ski boots for $3.99, but I also picked up a bag of crochet hooks....42 hooks for the same price...how could I resist??!!!
I would consider myself a better steward if I could share the hooks....is there any sizes that you do not have....because I would be happy to stick some in an envelope and send them your direction. :)
