I have been all about coffee cake for breakfast the last couple of weeks. Yes, it has to bake for forty minutes, but once I put it in the oven I am free to shower, dress, etc., with no worries. It takes less than five minutes to put together, and is delicious, dairy-free, and so easy. This is a damp, crumbly cake that is sweet and comforting.
*Schoolhouse Coffee Cake*
Heat oven to 350.
In large bowl (I use my Kitchenaid mixer) mix:
2 c. whole wheat flour
3/4 c. sugar
1 T. baking powder
1 t. salt
1/3 c. oil
1 c. rice milk (or soy or regular, of course)
1 egg
until blended, then beat for 2 minutes. Spread in greased 13x9 pan.
Spread evenly over top:
1 can well-drained sour cherries (not pie filling!!
or
1 c. frozen blueberries
or
1 c. cranberries
Sprinkle evenly with this streusel:
1/3 c. brown sugar
1/4 c. flour
1 t. cinnamon
3 T. oil
lightly tossed together with fork.
Bake until set and edges are lightly browned, about 40 minutes.
Feel free to substitute white for whole wheat flour--I grind my whole wheat flour fresh and keep it in the freezer so I am able to use it in quick breads without them turning out like bricks, but I don't know about whole wheat flour off the store shelf.

ReplyDeleteMmmm... this sounds wonderful Anna! My mom used to be 'queen of the coffee cake' when her Bible Study ladies were coming every week. I have some good recipes from her, but this looks much more adaptable.

ReplyDeleteAnna, thank you for posting the recipe. I was so happy to come upon it yesterday. My almost-4-year-old granddaugher (also named 'Anna') is allergic to soy and I am mildly allergic to casein, so it was like a gift from God to find your recipe which can be made without dairy or soy. I invited our Anna over today to bake with me and we made the Schoolhouse Coffee Cake with rice milk, white flour and frozen blueberries. It is so good! The recipe will be put in my binder of favourites.

ReplyDeleteI tried the coffee cake recipe this morning, and my family was wowed by it. I don't have fresh ground wheat flour, so I used store bought. I used one cup whole wheat, and one cup white. It turned out wonderfully. I used cherries this time, but can't wait to try the blueberries, too. Thanks for sharing, Anna.
ReplyDeletei made this last night, having only white flour and instead of oil, melted coconut oil in the cake and butter in the streusel. The finished product was not at all crumbly, in fact more like a soft cookie, but very very good! Actually better for the lunchboxes than something crumbly. Ours is topped with blueberries. Cherries sounds fabulous. Thanks!

ReplyDeleteAnd yes, it does work with store-bought whole wheat. I used a half-cup of white and the rest ww, and was still light. I think you could easily use the full 2c.

ReplyDeleteThe first time, I managed to get some of the quantities wrong. In England we use tsp for teaspoon and tbsp for tablespoon. I wasn't quite sure about t and T so put in too little baking powder. Despite this, the cake went very fast and was a great success.
After this I managed to use the right quantites and the cake did rise.
I used mixed cranberries and blueberries for the second and for the third sultanas. Both have been greatly appreciated by my family.

I can't wait for the kids to try it!! I ran out of wheat berries so I used some store bought wheat flour for the whole thing. I can't wait to check your site out more!! ReplyDeleteI made this on Sunday night and it was delicious! I used blueberries and canned peaches. Tonight I will make it with blackberries. I think this would also be great used as a dumpling. Basically make the fruit like you would for a fruit pie (ie apple,cherry whatever) and drop the batter in big dollops on top. My mom used to make something similar. Thanks for the yummy yummy recipe.
