Asparagus with Bacon
Bella made this tray of savory goodness. Wrap bundles of asparagus in thick bacon, drizzle all with equal parts soy sauce and brown sugar. Bake at 350 til bacon is adequately crispy. Can't possibly be good for you, but oh my.
It made me think of something Bella might like trying, too: Bake thick bacon slices rubbed with a mixture of brown sugar, freshly ground black pepper, and a pinch of cayenne. You bake them at 350F for about 8-12 minutes. Incredible!
I often drizzle my asparagus with olive oil and parm cheese but bacon--oh my , how tasty! Sure it can't be the healthiest , but a bit of indulgence once in a while, eh:-)
We do something similar with red peppers. Slice them into strips, wrap in bacon, and drizzle with olive oil. Sprinkle some sea salt and freshly ground pepper on them and bake at 350 until bacon is slightly crispy. They are great!
more healthy than 3 or 4 slices of bacon by itself. at least you get some vegetables in this way. looks delicious! Oh and I've had the bacon that Bethany was talking about. It is very yummy! I didn't use the cayenne though.
How can you go wrong with this combination? I've been serving up dates stuffed with pecans, wrapped in bacon, baked to perfection, as an appetizer. They taste so good it must be wrong. :)
Lisa, the asparagus roasts in the oven-a favorite way of cooking it even without bacon. For that, we generally toss with olive oil and salt and put it in at about 400.
Anna, thank you! I intend to try this. It would be esp. nice for company, because it also looks appealing. Did you see the roasted turnips in "Everyday Food"? Tossed with salt, pepper, olive oil, and Parmesan, roasted at 475? Yummy!
Roasted veggies are a favorite in this household.Currently helping my hubby with an enormous weight lose goal.Keeping the same foods but less and more fruits for dessert. I think a bundle like this with his poached eggs would be a really special treat.Of course some for the cook who is not dieting would be nice too.
