Clara manages to do what I never could: get the lettuce picked early enough in the day to give it a rest in cold water before using it for the salad. It's crisper and sweeter that way.
We are way too excited about the garden. Multiple checks a day to see what's popping up (everything), weeding of the most miniscule green sprouts. For now.
Interesting! I know storing it in water helped when I bought radish on the farmer's market; but I wouldn't think that it also helps preparing the vegetable...
ReplyDeleteOh, and I feel a need to throw in our favourite, simplest lettuce dressing... yoghurt, chopped dill leaves and a bit of salt. (It works for other salads as well, of course...)

ReplyDeleteI sometimes prepare the greens for a salad ahead of time by just washing them, wrapping them in a dishtowel, and then placing the bundle in the fridge. The dishtowel soaks up the water, giving me crisp, mostly dry lettuce a few hours later.
I especially like doing this when I have guests coming, as I don't want to fiddle with a salad at the last minute.
I'm doing the same thing, going out to the garden several times a day to just marvel at all those green shoots. Happy Spring!

ReplyDeleteWe are just a few weeks behind you, but getting excited about all of the goodies poking their way up through the soil! Soon we'll have our own edibles and there is just nothing like it!
