Bella Bakes a Strawberry Shortcake


Breaking from tradition, Bella created a strawberry shortcake from a glorious golden sponge cake, and not biscuits. Is it okay to confess that we all liked it even better? When the Composer pointed out that it was very much like a good fancy Twinkie, he meant it as a compliment.


Any sponge cake recipe will work here. Bake it in two layers and split them apart, then re-form with two boxes of strawberries, sliced and sweetened, and two cups of cream, whipped and sweetened.

We all had a slice after dinner outside at the picnic table. Then Felix and the Composer both backed out of going to see a Gilbert and Sullivan production with us, so they could stay home and polish it off.

My husband's favorite is, as we call it, a strawberry tall cake, made with 4 layers of cake. I don't know what type of cake I'd call it, but it's perfect with the strawberries, and I'm making it this weekend to celebrate one of my daughter's birthdays. Bella's looks much nicer than mine ever turns out, as I just slather the strawberries sweetened with a touch of sugar all over the layers and the top. Her presentation is lovely.

And might I add, congrats to Clara, and to you, on her ACT scores. I'd love to sit with you in the garden over tea and sewing patterns to talk over homeschooling thoughts.

Ooh that looks so wonderful! My mom used to make strawberry shortcake with angel food cake. We requested it often for birthdays.

Now come on Anna, I'll Google ACT and scores but not Twinkie. It's a southern sponge cake, right?

Rose, a Twinkie is a commercially-made, individually wrapped little snack food you might buy at a gas station. It's a "sponge cake" filled with "cream". Pretty junky.

oh lovely! and must have been amazing to tempt people away from Gilbert and Sullivan.

I grew up eating strawberries with shortcake "cottage pudding." Now I love it better with biscuits! Change can be so fun.

Yummy! And I love the photography with my favorite red gingham! It looks like Bella and her shortcake should be on the cover of a cookbook. I wouldn't be a bit surprised if one day she is on the cover of her own cookbook :)

R-i-g-h-t. So the Composer was tongue in cheek but happy to polish off the leftovers. Don't let him near a "gas station", who knows what he may bring home!
